We didn’t make it to the grocery store yesterday because our day was busier than I thought it would be, so instead we’re shopping tomorrow but I put together an easy meal plan for the week today. Keep in mind we are family of three, but our toddler doesn’t eat much at meal time so we’re more like a family of 2.5 when it comes to making food.
I’ll update this post with our spending on Thursday, once I know what we’ve spent!
Wednesday, June 11th – Out with family
Thursday, June 12th – Chicken and Asaparagus Lemon Stir Fry
Friday, June 13th – Tex Mex Casserole
Saturday, June 14th – Out for Father’s Day & my dad’s birthday
Sunday, June 15th – Brunch for dinner! Lazy Day Chocolate Chip Pancakes, Hashbrown Casserole and fruit salad
Monday, June 16th – Pizza muffins
Tuesday, June 17th – Spaghetti and meatballs (I use Ronzoni spaghetti that’s veggie based, and the meatballs are pre-made turkey ones with Italian spices)
And these are a few other things I’m making –
Sausage crescent breakfast casserole for breakfast
Avocado egg salad for a couple lunches. When this runs out, I’ll eat Amy’s Organic Burritos. Ezra usually has a pb&j with some pretzels or other carby side, and fruit.
Lemon Blueberry Cookies for a snack
Whole Wheat Oatmeal Banana Bread as another snack or breakfast option
Nothing too exciting, but I am looking forward to making the pizza muffins. Ezra has turned into this super picky eater lately so I don’t know if he will eat any of this. Guess we’ll find out. Wish me luck!
